As a spellcaster delaying even one level will cuck your spellcasting progression. Even if you multiclass into a full caster you only gain the spell slot but you won't gain any spells. EG wizard 4 cleric 1 has level 3 spell slots, but no level 3 spells until you level wizard again to level 5. Total spellcaster level 6, but only wizard 5 choices.
When you play a certain class some NPCs comment on it. I'm guessing that when you multiclass they will treat you as the original class but you could still use dialogue options of your multiclasses. At least thats how I would like it. I'm more worried about ilithid powers as they probably won't give you all of them.
